National Capital Farms: Farm-To-Restaurant Guide

In the modern global marketplace, we are increasingly aware about the sources of our food; farming practices, processing methods and miles traveled to market. Here at NCF, one of our goals is to facilitate more farm-to-restaurant connections that will foster an increase in the amount of local food used in dining of all cuisine types and price ranges. Chefs are in a unique position to collaborate with local farms and can benefit from promoting these relationships via their menus, catering events and Web sites. Everyone in the local economy benefits from fresh local foods. This is especially true in local restaurant fare. It may be unrealistic to assume that all ingredients might be locally grown given harvest cycles and growing season constraints. Certainly however, the most basic of meats, fruits, vegetables, grains and dairy products may be obtained locally in at least 3 seasons with minimal effort. Therefore, we seek to recognize these culinary localvore efforts via this Farm-to-Restaurant Guide.
